2011 Annual Dinner Event – “A Taste of Ontario”
What a fantastic night! This year’s annual dinner event was an unqualified success. Everyone enjoyed delicious food, superb wines, good music, and best of all, were entertained by Executive Chef Lynn Crawford. Chef Lynn delighted the crowd with stories, food tips, impromptu paddling lessons, autograph sessions – everyone enjoyed her enthusiasm and warmth.
Highlighting local foods, 350 guests were served a four-course gourmet meal with wine pairings supplied by Jackson Triggs Niagara Estate Winery.
Those who donated their time and talents to this delectable evening were:
Chef Jason Gibson, of Jason Gibson Personal Chef Services, prepared the Amuse Bouche (Jensen’s 3-Year Old White Cheddar & Herb Beignets), the Appetizer Course (Lake Erie Yellow Perch “En Papillote”), and the flavoured butters (Maple-Honey, Scallions & Garlic, and Pickled Pumpkin) for the fresh breads.
Chef Dennis Duce, of The Sherwood Restaurant & Catering, prepared the main course (Beef Tenderloin Medallions with Caramelized Onions, Asparagus, and Roasted Parisienne Potatoes).
St. John’s College Culinary Students prepared the Cheese Course Accompaniments (Ginger Rhubarb Chutney, Toasted Mustard Seed Honey, and Balsamic Strawberries and Pink Peppercorns) and worked in the kitchen all evening.
Chef Eric Wayslenky, of The Brantford Club, prepared the Dessert Course (Caramelized Raspberries and Woolwich Dairy Goat Cheese Sweet Tartlet with Crème Anglaise, Fresh Mint and Ontario Red Wind Maple Reduction).
Wine expert Bruce Jackson of Jackson Triggs enlightened us on the wine selections.
The evening finished off with Tea and Coffee service with coffee provided by Blue Dog Coffee Roasters.
A lucky group won the chance to sit with Chef Lynn at the Chef’s Table, stunningly decorated by Now and Always Elegant Wedding Decorating.

Brant Waterways began as a dream of a small core of people 22 years ago. It has grown to an important local foundation funding many worthwhile projects that enhance our local waterways.
Your donation helps continue the work of the Brant Waterways Foundation. This years donations will help fund new projects that make Brant a great place to live, and visit. The Brant County section of the new off road multi use trail (formerly the T.H.& B. rail corridor) now connects Brantford to Scotland, Waterford and Simcoe.
